Zucchini Pasta Napolitana Feast!

In my last post I talked about eating healthfully while travelling, and today I thought I would share with you one of the simple meals my travel buddy Tim made for us last night. And yes, we have a blender.

At the farmers markets we bought fresh zucchini, tomatoes, avocado, garlic, onion, basil and parsley. Tim had his trusty little spiraliser with him, so he made a big batch of zucchini noodles (you can also do a fettucini style noodle with a potato peeler if you don’t travel with your spiraliser 🙂 ) For a softer noodle, salt and let sit for ten minutes, then drain.

The sauce was simple – in the blender went fresh tomatoes, dehyrated tomatoes from Tim’s stock, avocado, garlic, onion, basil and parsley, a little coconut oil and a pinch of salt. Blend together and pour over the top of the zucchini noodles and garnish with slices of avocado and dehydrated cherry tomatoes. It is the best meal, and is great on its own, or you can serve it with a salad as we did – see below. Those are hemp seeds on top. Yum!

are the zucchini noodles just zucchini made to look like noodles?

Absolutely Maria! There are several machines that do this – and you can actually sprialise any vegetable to use in a salad, such as beetroot, carrot, sweet potato, zucchini, cucumber etc! It’s very easy, and if you salt the vegetables and then drain, they soften like noodles, so are very easy to eat!
