One of the most difficult things to give up when moving to a healthier or mainly raw lifestyle is processed bread products. Buying a loaf of bread is convenient and easy – you can make toast for breakfast and sandwiches for lunch – it is almost completely ingrained in our psyche that bread is a staple of our diet. But it doesn’t have to be.
Most processed bread products are nutritionally deficient. When the hull has been removed from the grain to make white bread, all the nutrition is removed as well. White bread is known as an anti-food – which means that it uses up more nutrients from your body in its digestion, than it gives. And white bread, besides being full of the highly allergic and irritating gluten, is broken down during digestion straight into sugar.
So one easy way to replace bread is to make these easy wraps, using a lettuce leaf instead of bread – you will be amazed at how easy it is to make, and how fresh they taste!
Lettuce Leaf Wraps
An alternative wrap to using wheat or bread products.
Serves 4
Ingredients:
4 large cos lettuce leaves
1 cup diced red capsicum
1 zucchinis shredded
½ cup sundried tomatoes
1 cup mung bean sprouts
1 avocado
1 cup baby spinach leaves
Fill lettuce leaves with filling, add either hummus or cashew avocado dip as a dressing and roll into a wrap. Secure with a toothpick.
As an alternative, place a sheet of nori in the wraps for a different type of flavour.
