Well, raw vegan ice-cream anyway!
I really don’t like being deprived, so I love the fact that you can create recipes that resemble the unhealthy dairy, sugar-laden, fat-laden products and make them in a tasty healthful way with raw gourmet food.
This recipe comes from Anand who owns Raw Power, a business that offers raw foods, superfoods, raw food classes & retreats. Chocolate Rawgasm Gelato
Ingredients:
1 ½ cups really raw cashews, soaked 1-2 hours
¼ cup coconut meat
2/3 cup raw agave nectar
1 cup filtered water
½ cup raw cacao powder
½ cup virgin coconut oil
½ vanilla bean
Pinch Himalayan rock salt
Serves 10-12
Method:
Blend all the ingredients in a blender until smooth. Place the mixture into popsicle moulds or a container.
Freeze for 6-8 hours.
Options:
Take out of mould and roll into equal amounts of Goji Berries and Cacao Nibs that have been blended together in a spice grinder or blender.
Variations:
Add Cacao Nibs through the mix, chopped cherries or Goji berries, or spice of your choice – cinnamon, orange, chili, peppermint…
